Prefer Java configuration over XML

While XML configuration is still supported for the time being, we typically don't add new features to it.

We should reflect that in the documentation by:

* Adding Java configuration variants where XML is used.
* Allow for toggling between Java and XML where we have samples for both.
* Default to showing the Java variant.
