Support for ES version 9

Recently migrated our Elasticsearch cluster to the latest version and telemetry stopped working. Upon investigation I realized that it asks the API for responses in version 7 format which is not supported in version 9.

I would like this to work with ES version 9

After a quick look, yes it seems clear that the receiver expects a v7 compatible response. https://github.com/open-telemetry/opentelemetry-collector-contrib/blob/main/receiver/elasticsearchreceiver/client.go#L233-L235

I will not be able to contribute a change but I can review and test a PR against ES 7 / 9.

@jsirianni I have made a local change and it works with ES 9. I'll test it with 7, 8 and 9 and raise a PR.
