Add Parse Server 5 test to CI #1651

Current Limitation
The CI currently only tests against the latest alpha branch of Parse Server. This is not ideal since we cannot tell whether the SDK stays compatible with older versions of Parse Server. Our org-wise premise is that CI tests are required to officially claim compatibility.
Feature / Enhancement Description
Add Parse Server 5 version(s) to CI. A quick solution could be adding the LTS branch release-5.x.x. A better solution would be to add discrete versions of Parse Server.
