Entity user provider: document how to use a non-default entity manager

The documentation is not clear on how you would define an entity user provider with another than the default entity manager (see [this question](https://groups.google.com/forum/#!topic/symfony2/IBlnXlWNx78) in the Symfony2 Google Group).
